How To Cook Fu Chuk
As the land enters into another full lockdown, we have been cooking a lot of simple dishes at habitation. Here's 1 our of favourite dishes – Braised pork with fu chuk ่ ็ซน็ช่.
Cook in three steps
With the force per unit area cooker, this dish can be done in under forty minutes.
All we need to practice is:-
i. Marinate pork
two. Soak dried beancurd sheets (called fu chuk in Cantonese)
3. Pressure cook!
We are big fans of fu chuk so naturally nosotros love braised pork cooked with dried beancurd sheets in soy sauce. This comforting dish can often be found in Chinese chap fan (economy rice) stalls around the Klang Valley.
Pork shoulder is beginning marinated in soy sauce and Shaoxing wine, before it is stir-fried with aromatics, and finally pressure level-cooked with edible bean curd sheets. Y'all can also cook it on the stove if you like.
A simpler version of tau yew bak
In some ways, this dish is a riff off Hokkien tau yew bak ่ฑๆฒน่ (bank check out our recipe here) or Taiwanese lu rou fan ๆปท่้ฃฏ – but with fewer spices and a less fatty cutting of meat.

Hokkien tau yew bak (but healthier and still as delicious)
However, the dish is still very flavourful as the flavours and sauces are actually infused into the meat, with some prissy chewy texture coming from the edible bean curd.
The dish as well yields plenty of gravy to drench your rice with. Simple and succulent!
Central Tips
* You may use other cuts such as loin or ribs – but nosotros prefer the shoulder as it has a nice chewy bite only yet retains the juiciness. Also, shoulder cuts tend to come with a bit of fat.
* We used dried bean curd sheets, just y'all tin can also use bean curd sticks. They require a longer time for soaking, and they don't melt or break into tiny pieces as easily.
* This dish is so simple, you lot tin can literally add together annihilation to your preference. Tofu puffs? Sure! Hard-boiled eggs? Why not!

Here's ane of our favourite dishes to cook in less than an hour – braised pork with fu chuk ่ ็ซน็ช่.
Ingredients

iii-4 sheets of dry bean curd sticks, cutting into 2×2 inch squares (or beancurd sticks)

900gm of pork shoulder (y'all may apply loin or ribs), cutting into bite-size
-
Cooking oil
- Pork marinade
-
ii tbsp light soy sauce
-
i tbsp nighttime soy sauce
-
1 tbsp Shaoxing wine
- Aromatics
-
1.5 whole bulbs of garlic
-
4 star anises
-
x thick slices of ginger
- Sauce
-
2 tbsp of rock sugar (or regular sugar)
-
3 tbsp of soy sauce
-
1 tbsp of dark soy sauce
-
Salt and pepper to gustation
-
Water
Directions
- Soak the beancurd sheets in filtered water until it is soft (about twenty minutes for us). If you opt to use beancurd sticks, it might take upward to an hr to soften.
- Rub the pork with marinade ingredients. If you are cooking on the stove top, please add together in one-2 tbsp of corn starch to tenderise the meat. Mix and prepare aside for at least half an 60 minutes.
- Prepare the pressure level cooker to broil/saute manner and estrus upwardly approximately 3-iv tbsp of oil. Add together sugar and stir until it has caramelised. Add star anise, garlic and ginger. Fry for a few minutes until fragrant.
- Add in the pork and fry until meat is no longer dark red. At this point, some liquid from the marinated pork may have pooled at the bottom of the pot. That is normal.
- Stir in the fu chuk sheets. Then pour enough water until it covers the bottom one-half of the meat, and bring the water to a boil. Add 3 tbsp of low-cal soy sauce and 1tbsp of dark soy sauce. Mix well.
- Pressure cook for 12mins (or simmer for xx mins if you lot are cooking over the stove).
- Once done, stir carefully equally not to suspension the fu chuk sheets. Conform taste with light soy sauce, pepper, sugar and salt as needed.
- Serve with rice!
